Made the garlic confit with pepper corns and bay leaves. Mashed 5 of them, added 1 tablespoon of goguchang and mixed both in 1 c. water. Added to 2c flour, 1 tsp salt, 1/4 tsp yeast. Woke up today (18 hours later) to an enthusiastic dough - risen perfectly, springy and...perfect! Now on 2nd rise...
